Glen Oaks Club, Inc Sous Chef in Old Westbury, New York
Supervises all kitchen employees including Pastry Chef, Line Cooks, Pastry Staff and Dishwashers. Creates special dishes, creates menus, and develops recipes. Trains employees on the execution of said items and oversees staff in the production of all menu items, using high quality ingredients, operating kitchen equipment, and evaluating foods, portioning, and garnishing. Checks quality and consistency of food to ensure that all quality standards are met. Ensues kitchen complies with local, state, and federal sanitary codes and club standards. Determines staffing levels to ensure appropriate coverage. Assists in monthly inventory, physical count, and organization of all food areas. Ensures the training of all new staff. Requirement: High School + 12 months of experience as a Cook, Chef, Sous Chef, Chef de Partie or related occupation. Must have ServSafe Certification (food handler)
